Christmas is now well and truly on its way – 8th December in Spain is a public holiday called Immaculada (Feast of the Immaculate Conception) which marks the beginning of the religious Christmas celebrations – so what better time for Carolina to come and be festive with us all, Spanish style!
We will be preparing a 3 course Spanish meal and you will conjure up either piquillo peppers stuffed with salt cod brandade and prawn bisque or an fried scallops with boulangere potato soup and crispy pastry ribbons for your starter. The main baked sea bream with lemon, garlic and herbs served with apple compote, roast red peppers and rosemary roast potato cubes or roast chicken deboned and stuffed with prunes, raisins and pine nuts with “picada” served with rosemary roast potato cubes and braised cabbage. Dessert will be chilled whisky cream with coffee granita or citrus and cava sorbet.
As always there is always something a little extra in Carolina’s classes and this time we are being treated to some traditional Christmas sweets (turron, polvorones, mazapanes) – Feliz Navidad!
