  • It has been nearly 3 years since our last Patisserie class and so we know that this is going to be a very popular one - the perfect Christmas gift for someone you know who loves baking or indeed just a treat for yourself! In this introductory class to the world of patisserie and baking we will be tackling shortcrust and sweet pastry, choux pastry and a simple biscuit cuillère. We will be producing an array of sweet and savoury treats guaranteed to impress your friends and family such as:

    There has been so much call for this class and for good reason!  Once you taste foraged mushrooms you never want to go back to a supermarket version. During this class you will be provided with a seasonal variety of locally foraged wild mushrooms and shown how to clean and prep them. We will also make delicious vegan pickled wild mushrooms, which you can take home to enjoy. You will learn about top 10 wild mushrooms that are easy to identify for beginners, what to look for when foraging for mushrooms, which mushrooms to look out for during different seasons and best cooking suggestions. We will finish with a Q&A accompanied by some wild herbal tea and treats made from foraged ingredients.
  • A very warm welcome to Ana who joins us to impart knowledge on all things foraging!! In this class we will be learning how to make our own immunity boosting Elderberry Syrup. We start with a walk around the farm and learn how to identify the elderberry tree.  Obviously by November there will be no berries, but fear not!!! We carefully harvested enough berries to freeze ready to defrost back to life and make your cold buster ready for winter - once you learn how to make it you will never go through another winter without it! We then proceed to the barn  where you will have all the ingredients to make 500 ml of elderberry syrup to take home. During the session you will learn about medicinal uses of the plant, it's history and folklore. We will finish with a Q&A accompanied by some wild herbal tea and treats made from foraged ingredients.

    Bang on trend and a class that you won’t find outside of London – Japanese Street Food!  With our first class totally sold out we of course had to put on another one for you! Japan has a big tradition of street food with huge festivals serving up delicious warm snacks.  Yukiko will guide you through the three of their most popular dishes.  This class is a first and will introduce to you to a myriad of new ingredients – all easily available to buy – and something to impress your friends and family with!
    • Okonomiyaki is the Japanese variation of a savory pancake, filled with cabbage and a topping of your choice. When broken down to okonomi (as you like it) and yaki (grilled), the word itself means grilled as you like it, so okonomiyaki is a very personal meal.
    • Takoyaki is a traditional marketplace street food found in Japan.  The snack is shaped in a delicious ball made of wheat flour in a special takoyaki pan, designed to create the shape. It is usually filled with minced or diced octopus, tempura scraps, pickled ginger and green onion. The takoyaki balls are then brushed over with a sauce resembling Worcestershire sauce, and mayonnaise, and are finally topped with dried bonito flakes.
    • Finally, Omu-soba are one of the most-beloved snacks enjoyed at Japanese festivals throughout the year.  Yakisoba, literally “fried buckwheat”,  is a Japanese noodle stir-fry wrapped in fluffy omelette.

    In Italy hardly a meal is served without pasta, it is the most important part of the multi course meal.   This class is perfect for all levels,  as with over 20 years experience of teaching, you are in the most experienced hands with Ursula!  This class is an absolute MUST!! If you have made pasta from scratch before and want to improve your pasta making techniques this is the class for you!  We will be making pasta from scratch but concentrating more the myriad of shapes (about 350!!) including garganelli, trofie, gnocchi Sarde, orrechiette, cavatappi, fusilli and trofie.  Not only that also learn how to create coloured pasta with  spinach, beetroot or maybe even saffron. You will learn how to make two types of pasta in this class the traditional egg pasta but also the water based semolina style pasta - each shape differs with its preference to a specific type of pasta!!   • There are few more satisfying dishes for the autumn time than risotto and gnocchi. Nothing like the supermarket versions that you might have tasted. Let Ursula guide you effortlessly to make the lightest gnocchi and the most unctuous risotto. Shira-ae is a seasonal vegetable side dish mixed with pureed soft silken tofu with ground pan roasted sesame seeds and seasoned with mirin, miso and soya sauce. Kinpira Gobo is a simple Japanese stir fry with seasonal vegetable such as braised carrot & burdock root, cooked with a soy sauce, mirin and sugar sauce. Let Yukiko teach you the art of folding your own using 3 different types of fillings including pork, prawn and vegetable varieties So this class can be vegetarian and vegan.  It is always wonderful to see people’s faces in the class when they suddenly realise that they too can do it!!! You will also learn how to make different types of Japanese sauces to accompany them. As with all our classes we will be able to recommend local suppliers for all ingredients so that you can go home and replicate them straight away.     If 2019 was anything to go by then 2021 will mark the return of one of our most popular classes - sushi making!!!  Yukiko is on a mission to tell everyone that sushi isn't just salmon and avocado - learn the history and top tips about sushi and how to make it seamlessly. In this class you will be learning how to make sushi 3 ways! We provide everything and you can even take home your own mat!!!

    This is the perfect class to learn the techniques and then have the confidence to go home and make your own at a fraction of the price of shop sushi and also oh so much more tasty. Finish off with an authentic green tea and ask Yukiko as many questions as you possible can, and people do!   From the amount of photos we get back from people showing how successful they are at making sushi afterwards we know this class works.
