Join the ever-popular John Fernandez as he explores the fresh, vibrant and beautifully balanced flavours of Vietnamese cooking in this hands-on class celebrating herbs, spices and seasonal produce.
As part of our ongoing commitment to cooking more seasonally and supporting local producers, we’ve adapted this class to make the most of exceptional ingredients grown and produced here in Oxfordshire. Expect plenty of fresh herbs, crisp vegetables and dishes packed with flavour and texture.
Dishes will include:
- Bánh Xèo – Vietnamese crispy pancakes filled with black oyster or lion’s mane mushrooms from our friends at Tumblebug in Combe, Oxfordshire, alongside fresh spring onions and seasonal vegetables
- Đồ Chua – Vietnam’s famous quick pickle of carrot and kohlrabi, bringing freshness, crunch and balance to the meal
- Gà Nướng Sả – fragrant lemongrass chicken skewers or mushroom skewers, served with Nuoc Cham, Vietnam’s essential sweet, salty, sour and spicy dressing
Throughout the class, John will share the techniques and flavour combinations that make Vietnamese food so distinctive, showing you how simple ingredients can be transformed into dishes that are fresh, vibrant and full of character.
Packed with flavour, fun and plenty of tips to recreate the dishes at home, this is a wonderful introduction to one of Southeast Asia’s most loved cuisines.

At The Jericho Kitchen we can suggest the style and flavours of what we’ll be cooking, but not always the exact dishes, as we buy directly from local producers and work with what their growing systems provide at their seasonal best.
By moving away from supermarkets and cooking with what is truly ready in the fields, we ensure you’re eating exactly what your body and the land need at that moment – health and seasonality over fixed menus.
