Get ready to learn how to cook on fire at The Coaching Barn, Little Stoke, near Wallingford.

We will spend the morning prepping and cooking a seasonal feast over fire pits outside at The Coaching Barn. After the class, you will gather together to eat and soak up some time outdoors next to the crackling fires, an absolute joy in the gloom of January.

Learn how to master a range of different fire cookery methods to elevate your food to new heights. You will be taught how to light a BBQ and build an open, roaring fire. We will discuss the fuels, heat sources and cooking methods using direct and indirect heat. Dishes may include:

  • Kimchi pancakes with charred spring onions and a sesame fried egg and fermented chilli honey
  • Scallops grilled in their shells with burnt onion puree, apple and fennel salad and dill
  • Ras-al-hanout marinated bavette with chilli butter
  • Cumin flatbreads, butternut squash muhamara and pickled onions
