Bologna is often described as the culinary heart of Italy – a city whose food traditions have shaped Italian cooking around the world. In this special workshop, Ursula Ferrigno draws inspiration from her latest book Bologna, exploring the rich flavours and remarkable ingredients that define this celebrated region of Emilia-Romagna.
Together we will explore some of the classic dishes and ingredients that make Bologna so beloved:
- Garganelli with olives and mushrooms
- Piadina bread with mortadella and burrata
- La giardiniera pickled vegetables for antipasti
- Ravioli dolci
Throughout the class Ursula shares the stories, ingredients and techniques that make Bolognese cooking so distinctive – generous, comforting and deeply rooted in the region’s culinary heritage.
As always at The Jericho Kitchen, the aim is that participants leave with a deeper understanding of these great Italian traditions and the confidence to recreate them at home.

At The Jericho Kitchen we can suggest the style and flavours of what we’ll be cooking, but not always the exact dishes, as we buy directly from local producers and work with what their growing systems provide at their seasonal best.
By moving away from supermarkets and cooking with what is truly ready in the fields, we ensure you’re eating exactly what your body and the land need at that moment – health and seasonality over fixed menus.
