Bologna is often described as the culinary heart of Italy – a city where food is taken seriously, recipes are handed down through generations and some of Italy’s most-loved dishes and ingredients have their roots.
In this special hands-on class, Ursula draws inspiration from her latest book celebrating the cooking of Emilia-Romagna, taking us into the kitchens of Bologna and the surrounding region.
Rich, generous and wonderfully suited to the colder months, this is Italian comfort food at its very best.
Dishes may include:
- Handmade Garganelli with Mushrooms – learn to make and shape this beautiful ridged pasta by hand, served with a seasonal mushroom sauce
- Piadina with Mortadella and Burrata – Emilia-Romagna’s wonderful soft flatbread, made from scratch and served with one of Bologna’s most famous salumi and creamy burrata
- Winter Giardiniera – crisp, colourful vegetables preserved in the Italian style for antipasti
- Ravioli Dolci – sweet-filled pastries from Emilia-Romagna, a delicious ending to our Bolognese feast
At The Jericho Kitchen we can suggest the style and flavours of what we’ll be cooking, but not always the exact dishes, as we buy directly from local producers and work with what their growing systems provide at their seasonal best.
By moving away from supermarkets and cooking with what is truly ready in the fields, we ensure you’re eating exactly what your body and the land need at that moment – health and seasonality over fixed menus.
