Fragrant, spicy, sweet, sour and deeply savoury – Malaysian cooking is a glorious collision of flavours.
Drawing on Malay, Chinese and Indian influences, Malaysia has one of the most exciting food cultures in Southeast Asia, where aromatic spices, coconut, chilli, citrus and fresh herbs come together in dishes bursting with character.
In this hands-on class, John Fernandez will introduce you to the building blocks of Malaysian cooking and show you how to create those wonderfully complex flavours in your own kitchen.
Dishes we will cook together:
- Chicken Satay with Peanut Sauce – marinated chicken cooked until beautifully charred, served with a rich, fragrant peanut sauce
- Malaysian Laksa – a warming, aromatic noodle soup with a deeply flavoured coconut broth, built from scratch with spices and aromatics
- Roti Canai – flaky, golden Malaysian flatbreads
At The Jericho Kitchen we can suggest the style and flavours of what we’ll be cooking, but not always the exact dishes, as we buy directly from local producers and work with what their growing systems provide at their seasonal best.
By moving away from supermarkets and cooking with what is truly ready in the fields, we ensure you’re eating exactly what your body and the land need at that moment – health and seasonality over fixed menus.
Unfortunately, we’re unable to cater for special dietary requirements on this class. We warmly recommend taking a look at Niki Webster’s classes, which are able to accommodate most dietary requirements.
